I got this idea after I made the Oreo cake in the previous post. I had some left over Oreoes and wanted to use them for something.
So here's what I came up with.
See, Oreo cupcakes.
I am SO pleased with how these turned out, and it wasn't that hard. All you have to do is whip up your cake mix, whatever kind you want. I decided to use a light colored cake mix so you'd be able to see the Oreo better, but next time I make these, I will definitely try a chocolate cake mix. When you put the cake mix into the cupcake pan, you put a little bit in the bottom, but not a lot. Enough for the bottom to be covered and the Oreo not touch the sides of the pan. Then you put more batter on top of the oreo. Make sure the Oreo is completely covered and not visible. It's okay if it's slightly visible because the cake batter will rise. Try to keep them about 2/3 full.
I suggest putting more batter on top of the Oreo than under it and it might be more centered. It's still going to taste really yummy no matter where the Oreo ends up, though. (:
After this baking experiment, I'm definitely going to try this with different kinds of cookies or candies. Maybe chocolate chip cookies or Reese's or something. I think we still might have some Girl Scout cookies in the freezer. [;
